Every cut at Bill's BBQ is dry-rubbed by hand, slow-smoked over hickory and oak, and cooked the way it always has been — with patience, precision, and a whole lot of respect for the craft.
Bill started smoking meat in his backyard in Metropolis with a rusted offset smoker he bought from a neighbor and a recipe notebook full of his grandmother's notes. Thirty years later, that same smoker sits in the corner of the restaurant, still doing the job it was built for.
Every morning, we arrive before dawn. We mix the rubs, we trim the fats, we light the fire. We don't rush it. We don't shortcut it. What comes out the other side is the result of doing one thing — real barbecue — better than most places do everything.
We've been feeding this community from 1105 E 7th St for as long as anyone can remember. Some of our regulars have brought their kids here, and now they're bringing their grandkids. That's the kind of trust you earn one plate at a time.
